Curry Salmon Burgers with Mango Chutney Mayo

This is seriously delicious. 3 years ago I began making all burgers from scratch and never again will I buy a frozen patty from the store. I was getting really good at beef, chicken and turkey, but wanted to try something different. This is definitely a winner.

1/3 cup mayo
1/4 cup mango chutney, chopped

1 1/2 lbs Salmon fillet, skin removed and cut into chunks
2 tbsp Plain yogurt (or greek, but I find greek makes it too tart or something)
4 tsp Hot curry paste (I add more cause I love curry!)

3/4 cup fine dry bread crumbs
1/4 cup fresh cilantro
1/4 cup freen onion (I add about 1/2 a cup)
1 tsp seasoned salt

1. Combine mao and chutney, chill
2. In a blender or food processor, add salmon, yogurt and curry paste until salmon is coarsely ground. Transfer to a bowl.
3. Add next 4 ingredients, mix well and divide into 6 portions. Shape into patties about 4 inches in diameter. Chill, covered for 2 hours (helps keep it all together). Place patties on a sheet of greased heavy duty foil. Cook on medium heat for about 7 minutes per side until internal temp is 70C or 160F.

Serve patties with mayo on rolls or buns of choice. I really like the thin buns but forget what they are called…..

I started a cleanse today in the hopes to combat some of the bloating I have been experiencing lately…. well, shit on me. I am so bloody bloaty and gassy it’s making my skin crawl. I am going to continue this cleanse as it seems like it will be quite successful, however, I may poop my pants at some point. Probably in the car in traffic. Or in the supermarket.

Ummm….does this mean I am a bad person?

So, I just came back from a 2 year old’s birthday party. Is it just me or do other mom’s find some other people’s kids to be extra annoying and horribly behaved? Let me make a point – not ALL other children, but some. When my son goes near these children I tend to scoop him up for fear that he would follow their lead and also begin licking the floor, pulling things off tables, hitting people in the head with balloons, running aimlessly all the while running into people. It drives me nuts to see a parent standing there watching “cute little Timmy” the shit misbehaving and not saying a thing to Timmy. Some parents actually think this behaviour is cute!

Now, I don’t believe in punishing a child to the extent where they are terrified to move, but I can safely say when my son is misbehaving, he is going to be taken aside, told what he is doing wrong, made to apologize if needed and directed to an activity that is positive for him. There is nothing worse than a child that is not given direction, consequences and instead ignored. You can still be a loving parent and discipline your child in a positive manner.

When my son sees a child who is completely out of control, he actually avoids said child.

Kids need structure and discipline. Otherwise we end up with scummy people who think they can get away with being rude and distasteful.

Tooted my own horn a bit on that one and I shall pat my back for it. I am proud my son will hug a child who is crying, share toys and politely say Hello to everyone he meets. He knows right from wrong and knows how to behave around other kids which is more than I can say for alot of adults.

All in all, let’s teach our kids some values and manners so they can make a positive mark on our world.

Mexican Green Rice

I made this little number one day and alls I can say is it is delicious.

1.5 cups basmati rice

3 cups water

1 tbsp roasted garlic seasoning paste (I buy the Compliments one at Sobeys)

1 tbsp olive oil

1 tsp salt

1 tsp cumin (don’t be generous or it turns weird)

2 cups finely chopped green onions

2 tbsp seeded and finely chopped jalapeno peppers

2 cups fresh cilantro, finely chopped

1. Rinse the rice in a fine mesh strainer under cold running water until water comes clear. Drain. In a sauce pan, mix water, rice, garlic paste, olive oil, salt and cumin. Bring to a boil. Reduce heat to medium low and cook uncovered until almost all water is absorbed, 8 -10 min. until rice is tender.

2. Remove the rice from heat and fluff with a fork. Toss with remaining ingredients.  Serve warm or at room temp. Enjoy!

2.5 g total fat

0 cholesterol

29 g carbs

o fibre

1 g sugar

310 mg sodium

Since I became a mom, I feel the need to mother everyone. I will happily lick my finger and clean your face if needed.

My 17 year old nephew just experienced this first hand while he was staying with my for a few days. I baby oxy cleaned the shit out of his clothes and constantly asked him about food and potential hunger. One day all he ate until dinner time was some M&M’s and half a DQ blizzard. I almost died. Now he has left and I feel like a piece of me is gone. He is my nephew, so I love him to bits and want to protect him, but he is also my friend. Sigh.
